Kansar

 

 

Suryaben tells me that in India Kansar is traditionally made for a special occasion such as a festive day or meeting the in laws for the first time. I guess this is a recipe to use when you hope to impress someone!

4oz semolina
4oz butter, ghee or oil
4oz brown sugar or Juggery
8oz water

Bring water to the boil, add ingredients and simmer stirring rapidly
Place lid on pan and simmer for 5-10 mins
Use wooden spoon to stir vigorously for 2 minutes until all the water is absorbed.
Serve ho

my recipe for kadhi.

what you need for 2 people.
SOUP
4 oz yoghurt
1 heap tbs of chick pea flour
10 fluid oz water
mix all together add masala
1level tsp salt
pinch of turmeric
half a tsp crushed ginger
1 mild green chili
1heap tsp of dhania-jeera masala (see masala recipe)
1 tsp sugar.

VAGHAR; seasoning
1 tsp butter or ghee
a pinch of whole jeera seed
1 clove garlic finely chopped
few curry patta (limbdi-leaves)
as soon as ghee is melted in the pan lower the heat & add all vaghar
ingredients together & add the soup & close the lid immediately
in order to save the full flavour of vaghar.
keep stirring till it comes to the boil and alternate between simmering and boiling at least 7 times.
